Rice Quality

The factors affecting rice quality.

Describe the 3 factors that have affect the quality of rice.

What factors affect rice quality?

The quality of rice is influenced by a combination of

1. variety,

2. crop production

3. post harvest management

1. Variety of rice

Each variety has different characteristics. Every variety can be different in:

  • Yield

  • Physical characteristics: color, shape, size , density, strength, chalkiness …

  • Chemical characteristics: eating quality-texture, aroma, taste, cooking time

  • Resistance to damage from stresses, for example drought, pest and diseases.

Different varieties have different characteristics

2. Crop Production Factors

Interruptions during the crop growth stages from  establishment to grain fill will influence the final quality.

Examples of such interruptions are:

  • Not enough water

  • Not enough nutrients

  • Attack of pests

The result from an interruption during crop growth can result in:

  • A reduction in yield

  • Not all the crops will be ripe at the same time

  • Damaged and unfilled grains

  • Chalkiness

  • ...

The result of an interruption...

3. Post production management

Poor post production means that you are not taking good care of the grain from the harvest onwards. For example:

  • You might be loosing grain because of pests

  • Maybe you have grain losses during one or more post production operations

  • Physical spoilage such as broken grain, grain contaminated by soil, urine (from rats) …

  • Chemical discoloration of the grain as a result of the grain that gets wet again (re-wetting) at a bad moment.

Poor storage management can lead to grain losses

In this course we focused on this last factor: post production management!

Up next we will see what factors affect the quality of paddy in particular.
