How are rice grains damaged?

Before milling, paddy rice can deteriorate through natural biochemical
changes in the grain which can create off-odors and changes in physical
appearance. The result is damaged grains that are fully or partially darkened.
Other causes of damage include insect , mold, water, or heat damage. |
